category tab now uses serverConnection to retrieve categories 

-removed category "NONE" from list
-disabled deleteing of category "Übertrag"
-fixed UTF-8 issues with InputStreamReader
-fixed TimeZone problems with JDBC
-added extra try/catch to SparkServer --> getCategories
